Cranberry Pumpkin Bread Recipe
Makes 5 mini-loaves
- 3 cups flour
- 1 Tbsp. + 2 tsp Pumpkin Pie Spice
- 2 tsp baking soda
- 1 ½ tsp salt
- 3 cups sugar
- 1 can (15 oz.) 100% pure pumpkin
- 4 large eggs
- 1 cup vegetable oil
- ½ cup orange juice
- 1 cup sweetened, dried, fresh, frozen cranberries or Craisins

Combine the flour, spice, baking soda, and salt in a large bowl
Combine sugar, pumpkin, eggs, oil, and juice in small mixer bowl. Mix until just blended.
Add pumpkin mixture to flour mixture. Stir just until moistened. Fold in the cranberries.
Spoon batter into 5 greased 3 x 5-inch loaf pans. Fill pans ½ of the way. Place loaf pans on baking tray.
Bake in preheated 350 degree oven for about 45 minutes or until wooden pick inserted in center comes out clean. Cool in pans.
